Ingredients
2 cups Masa harina
1 1/2 cups Warm water
1/2 teaspoon Salt
2 tablespoons Vegetable oil
1 cup Shredded mozzarella
1/2 cup Refried beans
Instructions
- Mix the masa. Combine masa harina, salt, and warm water. Stir until a soft dough forms. Let it rest for 5 minutes

- Form a ball. Take ¼ cup of dough. Flatten it into a disk
- Add filling. Place a spoonful of cheese and beans in the center

Notes
Keep a damp towel over the dough to prevent drying.
Wet your hands often for easier shaping.
Do not overstuff the pupusas (less is more).
If dough cracks, add a tablespoon of warm water at a time.
Cook over medium heat for even cooking.
Storage: Store leftovers in airtight container in fridge for up to 3 days. Reheat in skillet.
Freeze uncooked pupusas on a tray then transfer to a bag. Cook from frozen.
Serve with curtido (cabbage slaw) and salsa roja for authentic flavor.
