4 (6-oz) salmon fillets
1/4 cup white miso paste
1/4 cup miri
2 tbsp sake
2 tbsp granulated sugar
1 tbsp neutral oil
1 tbsp toasted sesame seeds
2 tbsp sliced scallions
Instructions
- Make the marinade: Whisk miso, mirin, sake, and sugar in a bowl until completely smooth
- Marinate the salmon: Place fillets in a dish or bag. Coat evenly with marinade. Cover and refrigerate for at least 30 minutes
- Cook: Heat oil in a non-stick skillet over medium-high. Wipe excess marinade off salmon. Cook skin-side down for 5-6 minutes. Flip and cook 1-2 minutes more until glazed
- Serve: Garnish with sesame seeds and sliced scallions
Notes
Pat salmon fillets dry before marinating for better glaze adhesion.
Marinate for at least 30 minutes, or up to 2 days for deeper flavor.
Ensure pan is hot before adding fish for a good sear.
Let salmon rest for a minute after cooking for juicier results.
