Ingredients
2 cups All-purpose flour
1 cup Granulated sugar
1/2 cup Unsalted butter (softened)
1 Large egg
2 tablespoons Fresh lemon juice
1 tablespoon Lemon zest
1 teaspoon Baking powder
1/4 teaspoon Salt
Instructions
- Preheat oven to 350°F. Line a baking sheet with parchment paper
- Cream the butter and sugar together until light and fluffy
- Add the egg, lemon juice, and lemon zest. Mix well
- In a separate bowl, combine flour, baking powder, and salt
- Gradually add dry ingredients to wet mixture. Stir until a soft dough forms
- Scoop tablespoon-sized balls of dough. Place them two inches apart on the baking sheet
- Bake for 10-12 minutes. Edges should be lightly golde
- Let them cool on the pan for five minutes, then transfer to a wire rack
Notes
Use room temperature ingredients for best results.
Do not overmix the dough to keep cookies tender.
Use fresh lemon juice, not bottled.
If dough feels sticky, chill for 10 minutes.
Store in airtight container at room temperature for up to 5 days. Freeze baked cookies or dough balls for up to 3 months.
