Ingredients
2 ½ cups 1-to-1 Gluten-Free Flour Blend (350g)
1 packet Instant Yeast (7g)
1 ½ tsp Salt
1 ¼ cups Warm Water (300ml)
3 tbsp Olive Oil or Melted Butter
2 tbsp Honey or Maple Syrup
3 large Eggs
1 tsp Apple Cider Vinegar
Instructions
- Whisk warm water, honey, and yeast together in a large bowl. Let sit 5-7 minutes until foamy
- Whisk in eggs, oil, and apple cider vinegar until smooth
- Add gluten-free flour and salt to wet ingredients. Beat on medium-high for 3 minutes
- Transfer batter to greased 9×5 inch loaf pan. Smooth top with wet fingers. Cover and let rise 45-60 minutes until nearly doubled
- Preheat oven to 375°F (190°C). Bake 40-45 minutes until deeply golden and hollow when tapped
- Cool in pan 10 minutes, then transfer to wire rack to cool completely before slicing
Notes
Use room temperature eggs for better incorporation.
Do not skip the 3-minute mixing time – it develops structure.
Let bread cool completely before slicing to prevent gummy interior.
Store in airtight bag at room temperature for 2-3 days or freeze sliced bread for up to 3 months.
