Ingredients

4 boneless, skinless chicken breasts
2 medium zucchini, sliced
2 tablespoons asado seasoning
3 tablespoons olive oil
2 cloves garlic, minced
1 lemon (juice and zest)
Salt and pepper to taste
Fresh parsley for garnish


Instructions

  1. Pat chicken dry with paper towels. Season generously with asado seasoning, salt, and pepper. Drizzle with 1 tablespoon olive oil and let sit for 5 minutes
  2. Heat a large skillet over medium-high heat. Add 1 tablespoon olive oil. Cook chicken for 5-7 minutes per side, until internal temperature reaches 165°F. Remove chicken and let rest
  3. In the same skillet, add remaining 2 tablespoons olive oil. Add sliced zucchini and cook for 3-4 minutes until tender
  4. Add minced garlic and cook for 30 seconds. Stir in lemon juice and zest. Season with salt and pepper
  5. Slice the rested chicken and serve alongside the lemon zucchini sauté. Garnish with fresh parsley

Notes

Asado seasoning can be found in most grocery stores or made at home with paprika, oregano, garlic powder, cumin, and salt.

For best results, do not overcrowd the skillet when cooking chicken; work in batches if needed.

Zucchini should be cooked until tender-crisp, not mushy. Fresh lemon juice brightens the dish.

Leftovers can be stored separately in an airtight container in the refrigerator for up to 3 days. Reheat chicken gently in a skillet with broth; reheat zucchini quickly to avoid sogginess.
