Ingredients
1 cup Liquid egg whites
0.5 cup Shredded cheddar cheese
0.25 cup Chopped spinach
0.25 cup Diced bell pepper
To taste Salt and pepper
2 tbsp Optional: cooked crumbled baco
Instructions
- Preheat your oven to 375°F (190°C). Grease a mini muffin tin well
- In a bowl, whisk the liquid egg whites until frothy
- Stir in the cheese, spinach, bell pepper, and seasonings
- Pour the mixture evenly into the muffin cups
- Bake for 12-15 minutes. They should be set and lightly golde
- Let them cool for 2 minutes before removing
Notes
Use a silicone muffin pan to prevent sticking.
Do not overbake; they can become rubbery.
Fresh liquid egg whites work best; avoid frozen ones.
Chop vegetables small for even cooking.
Store in an airtight container in the fridge for up to 5 days, or freeze for longer storage.
