A quick and flexible homemade chow mein recipe with tender noodles, crisp veggies, and savory sauce, ready in under 30 minutes.


Ingredients

8 oz chow mein or lo mein noodles
2 tbsp vegetable oil, divided
1 lb protein (chicken, shrimp, or tofu)
3 cloves garlic, minced
1 tbsp fresh ginger, grated
4 cups mixed veggies (like bell peppers, carrots, cabbage)
3 green onions, sliced
1/4 cup low-sodium soy sauce
2 tbsp oyster sauce
1 tbsp hoisin sauce
1 tsp sesame oil
1 tsp sugar
2 tbsp water or broth


Instructions

  1. Prep: Cook noodles according to package directions. Drain and toss with a little oil to prevent sticking. Whisk all sauce ingredients in a small bowl
  2. Cook Protein: Heat 1 tbsp oil in a large wok or skillet over high heat. Cook your chosen protein until done. Remove and set aside
  3. Stir-fry Veggies: Add remaining oil. Stir-fry garlic and ginger for 30 seconds. Add the harder veggies (like carrots) first, then softer ones (like cabbage). Cook for 3-4 minutes until crisp-tender
  4. Combine: Return the protein and cooked noodles to the wok. Pour the sauce over everything. Use tongs to toss and combine vigorously for 2-3 minutes until everything is hot and evenly coated
  5. Finish: Remove from heat. Stir in green onions. Serve immediately

Notes

Prep all ingredients before cooking as stir-frying moves fast.

Use highest heat possible for authentic flavor and to prevent soggy noodles.

Rinse cooked noodles briefly in cold water and toss with oil to prevent sticking.

For vegetarian version, use tofu and extra veggies like mushrooms.
