A simple and nourishing dandelion salad with a tangy lemon-garlic dressing, perfect for spring. This vegan and gluten-free recipe turns humble greens into a special dish with satisfying crunch and creamy avocado.
Ingredients
4 cups Fresh dandelion greens, washed
1 cup Cherry tomatoes, halved
0.5 medium Red onion, thinly sliced
0.5 cup Radishes, sliced
1 large Avocado, diced
3 tablespoons Extra virgin olive oil
2 tablespoons Fresh lemon juice
1 clove Garlic, minced
To taste Salt
To taste Black pepper
Instructions
- Wash dandelion greens thoroughly. Remove any tough thick stems. Pat completely dry. Tear larger leaves into bite-sized pieces
- Whisk olive oil, lemon juice, and minced garlic together in a small bowl. Season generously with salt and black pepper
- Place greens in a large mixing bowl. Add tomatoes, red onion, and radishes. Pour dressing over the top and toss gently to coat
- Gently fold in diced avocado. Serve immediately for best texture
Notes
For less bitterness, soak greens in cold water for 15 minutes, then drain and dry. A sweet dressing also helps.
Massage the greens with your hands for one minute to soften leaves and reduce bitter taste.
Use young, tender dandelion leaves; older leaves are much more bitter.
Always dry greens completely to avoid a watery salad.
Store leftover salad components separately (greens and dressing in different containers); undressed greens keep for up to 24 hours. Do not store dressed salad.
Substitutions: Use arugula or spinach for greens. Swap lemon juice for apple cider vinegar; add honey for sweetness or red pepper flakes for heat. Add-ins like feta cheese, walnuts, bacon bits, or hard-boiled eggs make it a complete meal.
