Ingredients
- Butternut Squash (peeled, seeded, cubed): 2 lbs
- Olive Oil: 2 tbsp
- Yellow Onion (chopped): 1 medium
- Garlic (minced): 4 cloves
- Vegetable Broth: 2 cups
- Nutritional Yeast: ¼ cup
- Salt: 1 tsp
- Black Pepper: ½ tsp
- Nutmeg (ground): ¼ tsp
- Pasta of choice: 1 lb
Instructions
1. 1. Preheat your oven to 400°F (200°C).
2. 2. Toss the cubed butternut squash with 1 tablespoon of olive oil, then spread it on a baking sheet.
3. 3. Roast for 20-25 minutes until fork-tender.
4. 4. Meanwhile, heat the remaining olive oil in a large pot over medium heat.
5. 5. Sauté the chopped onion until softened, about 5 minutes.
6. 6. Add the minced garlic and cook for another minute until fragrant.
7. 7. Transfer the roasted squash, sautéed onion and garlic mixture, vegetable broth, nutritional yeast, salt, pepper, and nutmeg to a high-speed blender.
