Ingredients
1 lb ground beef (80/20)
8 small corn or flour tortillas
4 slices American cheese
Salt & black pepper to taste
Butter or oil for cooking
1/2 cup mayonnaise
2 tbsp ketchup
1 tbsp yellow mustard
1 tbsp pickle relish
1/2 tsp garlic powder
Shredded lettuce, diced tomatoes, and pickles for topping
Instructions
- Make the special sauce: Mix mayonnaise, ketchup, mustard, pickle relish, and garlic powder. Set aside
- Preheat a large skillet or griddle over medium-high heat. Lightly oil it
- Divide beef into 8 equal balls. Place a ball on a tortilla. Immediately smash it flat with a spatula until very thin. Season with salt and pepper
- Cook for 2-3 minutes until edges are deep brown and lacy. Flip carefully. Add half a slice of cheese on top. Cook for 1 more minute
- Fold tortilla in half. Repeat with remaining beef and tortillas
- Drizzle tacos generously with special sauce. Add desired toppings. Serve immediately
Notes
Use 80/20 ground beef for best crunchy edges.
Work in batches to avoid overcrowding the pan.
Smash patties very thin and press firmly with a heavy spatula.
Let tacos cook undisturbed for a perfect crust.
Warm tortillas first to prevent cracking.
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a hot skillet, not microwave. Add fresh sauce after reheating.
