Ingredients

Scale

3 cups Cooked Chicken Breast (shredded or diced)
8 oz Cream Cheese (full fat, softened)
1/2 cup Heavy Cream
1/2 cup Chicken Broth
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Dried Parsley
1/2 tsp Salt
1/4 tsp Black Pepper
5 oz bag Fresh Spinach
1 cup Shredded Cheddar Cheese

Instructions

  1. Preheat your oven to 375°F (190°C)
  2. In a large bowl, combine the softened cream cheese, heavy cream, chicken broth, garlic powder, onion powder, dried parsley, salt, and pepper. Mix until smooth and well combined
  3. Fold in the cooked shredded chicken and fresh spinach until everything is evenly coated
  4. Transfer this mixture into a 9×13 inch baking dish and spread it out evenly
  5. Sprinkle the shredded cheddar cheese generously over the top
  6. Bake for 25-30 minutes, or until the cheese is bubbly and golden brow
  7. Let the casserole rest for a few minutes before serving

Notes

For ultimate ease and flavor, use pre-cooked rotisserie chicken and shred it finely.

Always soften your cream cheese completely before mixing to prevent lumps in the sauce.

Do not overbake; the goal is bubbly cheese and heated-through ingredients, not dry chicken.

If your spinach seems too wet, squeeze out excess moisture before adding it to the mixture.

Let the casserole rest for 5-10 minutes after baking for the sauce to set slightly, making serving much neater.

Store any leftovers tightly covered in the refrigerator for up to 3-4 days.

To reheat, use the microwave for individual portions, or cover the dish with foil and reheat in an oven preheated to 350°F (175°C) for 15-20 minutes for larger portions. Add a splash of broth or cream if it seems a little dry.

You can assemble the entire casserole a day in advance, cover tightly, and refrigerate. Bake as directed, adding 5-10 minutes to the baking time since it will be chilled.

This casserole freezes well. Assemble, cover tightly with foil, and freeze for up to 3 months. Thaw overnight in the refrigerator before baking.
