Description

As a mom of three, I live for dinners that practically make themselves. Between school runs and soccer practice, I need meals that are both comforting and effortless. That's where this Creamy Crockpot Cajun Butter Chicken changed everything. I remember the first time I made it; the house smelled like a Louisiana kitchen. My kids, who usually shy away from spice, devoured every bite. This recipe isn't just food; it's a warm hug on a busy weeknight. The Creamy Crockpot Cajun Butter Chicken is rich, bold, and utterly satisfying. Let me show you how to make this incredible dish. It's become a staple in our home, and I know it will in yours too.

Ingredients

Scale

1.5 lbs Boneless, skinless chicken breasts
0.5 cup (1 stick) Salted butter
2 tablespoons Cajun seasoning
4 cloves Garlic, minced
0.5 cup Chicken broth
1 cup Heavy cream
4 oz Cream cheese, softened
0.5 cup Grated Parmesan cheese
To taste Salt and pepper

Instructions

  1. Place chicken breasts in the crockpot. Season generously with Cajun seasoning, salt, and pepper. Add minced garlic on top
  2. Cube the butter and scatter it over the chicken. Pour in the chicken broth. Do not stir
  3. Cover and cook on LOW for 4-5 hours or HIGH for 2-3 hours. The chicken should be shreddable
  4. Carefully remove the chicken. Shred it with two forks. Return it to the pot
  5. Add softened cream cheese, heavy cream, and Parmesan. Stir until everything melts and becomes smooth. The sauce will thicken beautifully
  6. Let it cook for another 10 minutes. Stir well. Taste and adjust seasoning. Serve

Notes

For the best result, always use full-fat dairy to prevent curdling.

Don't lift the lid during cooking to maintain temperature.

Shred chicken while still warm for ease.

Leftovers can be stored in an airtight container in the refrigerator for up to 4 days or frozen for up to 3 months.

Reheat gently with a splash of milk if sauce thickens.
