Ingredients
Short-grain white rice (Arborio or sushi rice works best): 1 cup
Water: 2 cups
Sweetened condensed milk: 1 (14-ounce) can
Whole milk: 3 cups
Granulated sugar: ¼ cup (adjust to taste)
Vanilla extract: 1 teaspoon
Ground cinnamon (for garnish): ½ teaspoon
Pinch of salt
Instructions
1. Preheat Oven: First, preheat your oven to 325°F (160°C). Then, lightly grease a 2-quart baking dish.
2. Cook Rice: Next, combine the short-grain rice and water in a medium saucepan. Bring it to a boil, then reduce heat, cover, and simmer for 10-12 minutes, or until the water is absorbed.
3. Combine Ingredients: Transfer the cooked rice to your prepared baking dish. Stir in the sweetened condensed milk, whole milk, granulated sugar, vanilla extract, and a pinch of salt. Ensure everything mixes well.
4. Bake: Bake for 1 hour, stirring every 20 minutes to prevent a skin from forming and to ensure even cooking.
5. Continue Baking: After 1 hour, bake for an additional 30-45 minutes without stirring, or until the pudding is creamy and set, with a slightly golden top. The liquid should be mostly absorbed.
6. Cool & Serve: Remove from the oven. Let the pudding cool slightly before serving. Garnish with a sprinkle of ground cinnamon. Enjoy warm or chilled!
