Ingredients
1 (9-inch) Pie crust (store-bought or homemade)
4 large Eggs
1 ½ cups Cottage cheese (small curd, 4% milkfat recommended)
1 (10-ounce) package Frozen chopped spinach, thawed and squeezed dry
½ cup Shredded Monterey Jack or cheddar cheese
¼ cup Milk (any kind)
¼ teaspoon Salt
⅛ teaspoon Black pepper
Pinch Nutmeg (optional, enhances flavor)
Instructions
1. Preheat your oven to 375°F (190°C). Place the pie crust into a 9-inch pie plate.
2. In a large bowl, whisk the eggs until well beaten.
3. Add the cottage cheese, thawed and squeezed-dry spinach, shredded cheese, milk, salt, pepper, and nutmeg (if using) to the bowl. Mix everything thoroughly until well combined.
4. Pour the cottage cheese and spinach mixture evenly into the prepared pie crust.
5. Bake for 40-50 minutes, or until the center is set and a knife inserted near the center comes out clean. The top should be golden brown.
6. Remove the quiche from the oven and let it rest for 5-10 minutes before slicing and serving. This allows the quiche to set properly.
