Description

These Cottage Cheese Egg Bites are fluffy, cheesy, and ridiculously easy. They are perfect for meal prep and taste just like the expensive Starbucks version but at a fraction of the cost. Packed with protein, they are naturally gluten-free and low-carb, making them ideal for busy mornings.


Ingredients

6 Large eggs
1 cup Cottage cheese (small curd, full fat)
0.5 cup Shredded cheddar cheese
0.5 cup Chopped spinach (fresh or frozen, thawed)
0.25 cup Cooked crumbled bacon (optional)
0.25 teaspoon Salt
0.125 teaspoon Black pepper
0.25 teaspoon Garlic powder


Instructions

  1. Preheat your oven to 375°F (190°C). Spray a standard 12-cup muffin tin generously with cooking spray
  2. Add all ingredients (eggs, cottage cheese, cheddar, spinach, spices, and bacon) to a blender. Blend until smooth
  3. Pour the batter evenly into the muffin cups, filling each about 3/4 full
  4. Bake for 18-22 minutes, until golden and set, and a toothpick inserted comes out clea
  5. Let them cool in the pan for 5 minutes, then remove. Enjoy immediately or store for later

Notes

Do not skip the blender step; it makes the egg bites light and airy.

Do not overfill the cups; they puff up slightly during baking.

Let them cool completely before storing in an airtight container. They last 4-5 days in the fridge.

For freezing, place in a single layer on a baking sheet, freeze for 1 hour, then transfer to a freezer bag. They stay good for up to 3 months.

Reheat in the microwave for 30-45 seconds, or in a toaster oven for a crispy edge.

Substitute cheese, vegetables, or meat as desired. Lactose-free cottage cheese works for dairy-sensitive individuals.
