Ingredients
1 ½ cups All-purpose flour
½ cup Granulated sugar
½ cup Unsalted butter (softened)
¼ cup Sour cream
1 large Egg
1 tsp Vanilla extract
1 tsp Baking powder
¼ tsp Salt
1 tsp Cinnamo
¼ cup Brown sugar (for streusel)
¼ cup All-purpose flour (for streusel)
2 tbsp Cold butter (for streusel)
1 tsp Cinnamon (for streusel)
Instructions
- Preheat your oven to 350°F. Line a baking sheet with parchment paper
- In a large bowl, cream together the softened butter and sugar
- Beat in the egg, vanilla, and sour cream until smooth
- In a separate bowl, whisk the flour, baking powder, salt, and cinnamo
- Gradually add the dry ingredients to the wet mixture. Stir just until combined. Do not overmix
- Make the streusel: Combine brown sugar, flour, and cinnamon in a small bowl. Cut in the cold butter using a fork until crumbly
- Scoop tablespoon-sized balls of dough onto the baking sheet. Press them down gently
- Sprinkle the streusel generously on top
- Bake for 10 to 12 minutes. They will look slightly underdone in the center
- Let them cool on the pan for 5 minutes. Transfer to a wire rack
