Ingredients

  • All-purpose flour: 1 ½ cups
  • Unsweetened cocoa powder: ¾ cup
  • Granulated sugar: 1 ½ cups
  • Baking soda: 1 ½ teaspoons
  • Salt: ½ teaspoon
  • Large eggs: 2
  • Milk (whole or 2%): 1 cup
  • Vegetable oil: ½ cup
  • Vanilla extract: 2 teaspoons
  • Fresh raspberries (for batter): 1 cup
  • Butter (unsalted, softened): ½ cup
  • Powdered sugar: 3-4 cups
  • Cocoa powder (for frosting): ½ cup
  • Milk or cream (for frosting): 2-4 tablespoons
  • Raspberry jam or extract (for frosting): 1-2 tablespoons
  • Fresh raspberries (for garnish): ½ cup

Instructions

1. 1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.

2. 2. In a large bowl, whisk together the flour, cocoa powder, granulated sugar, baking soda, and salt.

3. 3. In a separate medium bowl, whisk the eggs, milk, vegetable oil, and vanilla extract until well combined.

4. 4. Pour the wet ingredients into the dry ingredients. Mix on low speed with an electric mixer, or by hand, until just combined. Do not overmix. Gently fold in 1 cup of fresh raspberries.

5. 5. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.

6. 6. Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a cupcake comes out clean.

7. 7. Remove the cupcakes from the oven and let them cool in the muffin tin for a few minutes. Transfer them to a wire rack to cool completely before frosting. This ensures perfect Chocolate Raspberry Cupcakes.

8. 8. To make the frosting: In a large bowl, beat the softened butter until creamy. Gradually add the powdered sugar and cocoa powder, alternating with milk or cream, until smooth and fluffy. Stir in the raspberry jam or extract.

9. 9. Once the Chocolate Raspberry Cupcakes are completely cool, frost them generously. Garnish each cupcake with a fresh raspberry. Enjoy your perfect Chocolate Raspberry Cupcakes!
