A Singapore-style chili crab recipe that transforms simple ingredients into a restaurant-worthy feast with a perfect balance of sweet, savory, and spicy flavors clinging to sweet, succulent crab. This fun, hands-on meal is ideal for family gatherings and creates delicious memories.
Ingredients
2 lbs Dungeness crab clusters
2 tbsp vegetable oil
1 tbsp fresh ginger, minced
4 cloves garlic, minced
2–3 tbsp chili garlic sauce
1/4 cup ketchup
2 tbsp soy sauce
1 tbsp rice vinegar
1 cup chicken or seafood broth
1 tsp cornstarch
1 tbsp water
2 green onions, sliced
1 egg, lightly beate
Instructions
- Prepare the Crab: Pat crab clusters very dry with paper towels to help sauce cling later
- Make the Aromatics: Heat oil in large wok or skillet over medium-high heat. Add ginger and garlic, sauté for 30 seconds until fragrant
- Build the Sauce: Stir in chili garlic sauce, ketchup, soy sauce, and vinegar. Pour in broth and bring to a simmer
- Cook the Crab: Gently add crab clusters to sauce. Spoon sauce over them, cover, and simmer for 5-7 minutes to heat through
- Thicken & Finish: Push crab to one side. Stir cornstarch with water and pour into simmering sauce. Stir constantly until sauce thickens. Drizzle in beaten egg in thin stream, then stir. Turn off heat and garnish with green onions
Notes
Dry crab thoroughly for best sauce adhesion.
Taste sauce before adding crab and adjust sweet, salty, or spicy elements to liking.
