A quick and easy cauliflower fried rice recipe that turns a head of cauliflower into a light, fluffy, and flavorful dish the whole family will love. It's naturally gluten-free and low-carb, cooks in under 15 minutes, and uses simple pantry staples.
Ingredients
1 large head Cauliflower (or 12 oz bag riced cauliflower)
2 tablespoons Sesame Oil (toasted)
3 cloves Garlic (minced)
1 tablespoon Fresh Ginger (grated)
1 cup Frozen Peas & Carrots (no need to thaw)
2 large Eggs (lightly beaten)
3 tablespoons Low-Sodium Soy Sauce (or tamari)
3 Green Onions (sliced for garnish)
Instructions
- Rice the cauliflower: Cut the head into florets. Pulse in a food processor until it looks like rice. Do small batches
- Sauté aromatics: Heat 1 tbsp sesame oil in a large skillet. Cook garlic and ginger for 30 seconds
- Cook the 'rice': Add the cauliflower rice. Stir-fry for 5 minutes. Then push it to one side
- Scramble the eggs: Pour beaten eggs onto the empty side. Cook quickly, then mix everything together
- Add veggies and sauce: Stir in peas, carrots, and soy sauce. Cook for 2 more minutes
- Serve hot: Top with green onions. Enjoy!
Notes
Don't skip drying the cauliflower. Wet cauliflower makes soggy 'rice'. Pat it dry first.
Use high heat to sear the cauliflower for the best texture.
Work quickly; have all ingredients prepped before you start to prevent burning.
Taste as you go and adjust the soy sauce to your liking.
Store leftovers in an airtight container in the fridge for up to 4 days.
Reheat in a hot skillet with a splash of sesame oil—avoid the microwave.
