Description

A celebratory Cajun Seafood Boil with Garlic Butter Sauce that turns an ordinary weeknight into a special occasion. Featuring shrimp, andouille sausage, corn, and baby potatoes boiled in spicy seasoning then drenched in a rich garlic butter sauce.


Ingredients

1 lb raw shrimp (shell-on)
1 lb andouille sausage (sliced)
4 ears corn (halved)
1 lb baby red potatoes
1/4 cup Cajun seasoning (for the boil)
Water (to cover)
1/2 cup unsalted butter
6 cloves garlic (minced)
1 tbsp Cajun seasoning (for the sauce)
1 tbsp lemon juice
1 tsp hot sauce (optional)
Fresh parsley (chopped)


Instructions

  1. Fill a large stockpot with water. Add 1/4 cup Cajun seasoning and stir. Bring to a rolling boil over high heat
  2. Add the potatoes and corn. Boil for 10 minutes. Then, add the sliced sausage. Continue boiling for another 5 minutes
  3. Add the shrimp. Boil for exactly 2-3 minutes until they turn pink. Do not overcook. Drain everything in a colander
  4. While the seafood cooks, make the garlic butter sauce. Melt butter in a small saucepan over medium heat. Add garlic and cook for 1 minute until fragrant. Stir in the remaining Cajun seasoning, lemon juice, and hot sauce
  5. Pour the sauce over the drained seafood boil. Toss gently. Garnish with fresh parsley. Serve immediately

Notes

Use an extra-large pot to fit all ingredients comfortably.

Taste the boiling water; it should be salty and spicy like the sea. Adjust seasoning before adding seafood.

Never overcook the shrimp—they cook in minutes.

Make extra garlic butter; everyone will want more.

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet with a splash of water or broth over medium heat, or in a 350°F oven for 10 minutes. Avoid microwave to prevent rubbery seafood.
