Description

An easy, no-cook bruschetta dip that captures all the classic flavors of ripe tomatoes, fragrant basil, and zesty garlic in a scoopable, shareable form. Perfect for busy weeknights or last-minute entertaining.

Ingredients

Scale

4 cups Roma tomatoes, diced
1/4 cup fresh basil, chopped
8 oz fresh mozzarella pearls
2 tbsp balsamic vinegar
3 tbsp olive oil
2 cloves garlic, minced
1/2 tsp salt
1/4 tsp black pepper

Instructions

  1. Dice the tomatoes. Remove the seeds and excess juice to prevent a watery dip
  2. Finely chop the fresh basil
  3. In a large bowl, combine the tomatoes, basil, and mozzarella pearls
  4. In a small bowl, whisk together the olive oil, balsamic vinegar, and minced garlic
  5. Pour the dressing over the tomato mixture and toss gently to combine
  6. Season with salt and pepper
  7. Let the bruschetta dip sit for 15 minutes to allow the flavors to meld
  8. Serve at room temperature with crusty baguette slices, tortilla chips, or pita chips

Notes

Draining the tomatoes well is key to preventing a watery dip.

Use good quality olive oil for the best flavor.

For a dairy-free version, omit the mozzarella.

Store leftovers in an airtight container in the refrigerator for up to two days. Do not reheat; serve cold or at room temperature.
