Ingredients
4 cups Roma tomatoes, diced
1/4 cup fresh basil, chopped
8 oz fresh mozzarella pearls
2 tbsp balsamic vinegar
3 tbsp olive oil
2 cloves garlic, minced
1/2 tsp salt
1/4 tsp black pepper
Instructions
- Dice the tomatoes. Remove the seeds and excess juice to prevent a watery dip
- Finely chop the fresh basil
- In a large bowl, combine the tomatoes, basil, and mozzarella pearls
- In a small bowl, whisk together the olive oil, balsamic vinegar, and minced garlic
- Pour the dressing over the tomato mixture and toss gently to combine
- Season with salt and pepper
- Let the bruschetta dip sit for 15 minutes to allow the flavors to meld
- Serve at room temperature with crusty baguette slices, tortilla chips, or pita chips
Notes
Draining the tomatoes well is key to preventing a watery dip.
Use good quality olive oil for the best flavor.
For a dairy-free version, omit the mozzarella.
Store leftovers in an airtight container in the refrigerator for up to two days. Do not reheat; serve cold or at room temperature.
