Description

This homemade Birria Seasoning blend uses dried chiles and common spices to create an authentic, bold flavor for tacos, stews, or soups. It's simple, customizable, and cost-effective.


Ingredients

3 Dried guajillo chiles
1 Dried ancho chile
1 tablespoon Cumin seeds
1 teaspoon Coriander seeds
1 teaspoon Black peppercorns
1 tablespoon Dried oregano
1 tablespoon Garlic powder
1 tablespoon Onion powder
2 teaspoons Smoked paprika
1/4 teaspoon Ground cloves
1/2 teaspoon Ground cinnamo
1 tablespoon Salt


Instructions

  1. Toast the dried chiles in a dry skillet over medium heat, pressing them flat for 10 seconds per side until fragrant
  2. Remove stems and seeds from the chiles, place them in a bowl, and cover with hot water. Soak for 15 minutes until soft
  3. Toast the cumin seeds, coriander seeds, and peppercorns in the same skillet for 1 minute, then let them cool
  4. Drain the softened chiles and add them to a blender along with the toasted spices and all remaining dry ingredients (oregano, garlic powder, onion powder, smoked paprika, cloves, cinnamon, and salt)
  5. Blend until you have a fine, powdered Birria Seasoning
  6. Store the homemade Birria Seasoning in an airtight jar. Use 3 tablespoons per pound of meat for perfect birria

Notes

Always toast whole spices before grinding to release essential oils for maximum flavor.

Do not skip soaking the chiles completely; hard chiles will not grind well.

Use a dedicated spice grinder or high-powered blender for the best texture.

Let freshly made seasoning rest for 24 hours to meld flavors.

Store in a cool, dark place in a glass jar with a tight lid for up to six months.

Shake the jar before each use to re-distribute the spices.

For a smokier seasoning, add 1 teaspoon of liquid smoke when cooking.

To make without dried chiles, substitute with smoked paprika and ancho chili powder, but flavor will change significantly.
