Description
This Baja Blast Pie Recipe captures all the tropical lime and citrus magic of the iconic fountain drink in a creamy, dreamy no-bake dessert. It's fun, easy, totally addictive, and made with simple ingredients that my family devours in minutes.
Ingredients
1 1/2 cups Lime-flavored soda (like Sierra Mist)
1 (3.4 oz) box Instant vanilla pudding mix
8 oz Cool Whip (thawed)
2–3 drops Blue food coloring
1 drop Green food coloring
1 (9-inch) Graham cracker crust (pre-made)
Optional: Lime zest for garnish
Instructions
- In a large bowl, whisk the lime soda and instant vanilla pudding mix together for 2 minutes until it thickens
- Gently fold the thawed Cool Whip into the pudding mixture using a spatula until smooth
- Stir in the blue and green food coloring until the mixture achieves the desired Baja Blast blue-green hue
- Immediately pour the filling into the graham cracker crust and spread evenly
- Refrigerate the pie for at least 4 hours (overnight is best) to set firmly
- Garnish with lime zest, slice, and serve cold
Notes
Chill your mixing bowl first to help the pudding set faster.
Do not overmix the Cool Whip to maintain a light, airy texture.
Use gel food coloring for vibrant color; liquid coloring may thin the filling.
Let the pie chill completely for the best slices; patience yields the best results.
Store covered in the refrigerator for up to 3 days. Do not freeze, as it will become watery upon thawing.
