Description
A classic Pennsylvania Dutch dessert with a gooey molasses custard bottom and a buttery crumb topping. This Amish shoo fly pie recipe brings back simple, sweet memories and is perfect for cool autumn evenings.
Ingredients
1 ½ cups all-purpose flour
½ cup brown sugar, packed
¼ cup cold butter, cubed
½ teaspoon baking soda
Pinch of salt
1 cup molasses (robust or mild)
¾ cup boiling water
1 egg, lightly beate
1 teaspoon baking soda
1 (9-inch) unbaked pie crust
Instructions
- Preheat oven to 375°F (190°C). Prepare unbaked pie crust in a pie dish
- Make crumb topping: In a bowl, combine flour, brown sugar, and salt. Cut in cold butter until mixture resembles coarse meal. Set aside
- Make filling: In a large bowl, whisk together molasses, boiling water, and baking soda. The mixture will foam lightly. Stir in beaten egg until smooth
- Assemble pie: Pour filling directly into unbaked pie crust
- Sprinkle crumb topping evenly over filling
- Bake for 35-40 minutes. Pie will be set in center but still slightly jiggly. Cool completely on a wire rack. Needs time to set
Notes
For a less sweet version, use mild molasses. For a stronger kick, use robust molasses.
Can be made gluten-free by using gluten-free flour blend. For vegan, swap butter for vegan stick and use plant-based egg substitute.
Add 1 teaspoon cinnamon to crumb topping for extra flavor.
Store at room temperature, covered loosely with foil, for up to 3 days. Refrigerate for firmer texture.
Reheat individual slices in microwave for 15 seconds, or whole pie in 300°F oven for 10 minutes.
Freezes well: wrap tightly in plastic wrap and foil, freeze up to 3 months. Thaw at room temperature before serving.
