Ingredients
1 cup Whole milk ricotta cheese (drained if watery)
0.5 cup Pistachios (shelled, crushed)
3 tablespoons Honey (plus extra for drizzle)
0.5 teaspoon Vanilla extract
0.125 teaspoon Sea salt (pinch)
Instructions
- In a small bowl, mix the ricotta, honey, vanilla extract, and a tiny pinch of salt. Stir everything together to form the base
- Use a small cookie scoop or your hands. Roll the ricotta mixture into small, bite-sized balls
- Place the crushed pistachios on a plate. Gently roll each ball in the nuts until completely coated
- Place the finished bites on a plate. Drizzle a little extra honey over the top. Serve immediately or chill first
Notes
Always drain your ricotta if watery to keep bites from being mushy.
Use cold ingredients for easier handling; wet your hands slightly to prevent sticking.
Chop pistachios finely to help coating stick; toasting for 2 minutes enhances flavor.
Store in an airtight container in the fridge for up to 3 days. Do not freeze.
Serve cold or at room temperature; microwave one for 10 seconds if desired warm.
