Ingredients

Instructions

  • 1. Preheat the oven to 325ยฐF (165ยฐC) and line the bottom of a springform pan with parchment paper.
  • 2. Whisk egg yolks with yogurt, vanilla extract, lemon zest, and cornstarch until smooth.
  • 3. In a separate bowl, beat egg whites until foamy, then gradually add sugar and beat until soft peaks form.
  • 4. Gently fold the egg whites into the yogurt mixture in batches, keeping the batter airy.
  • 5. Pour batter into the prepared pan and smooth the top.
  • 6. Place the pan in a water bath and bake until the cake is set but still slightly jiggly in the center.
  • 7. Turn off the oven and let the cake cool inside with the door cracked.
  • 8. Remove from oven, cool completely, then refrigerate to fully set.
  • 9. Dust with powdered sugar before serving.
