Ingredients
- Plain Greek yogurt
- Eggs, separated
- Granulated sugar
- Cornstarch
- Vanilla extract
- Lemon zest (optional)
- Powdered sugar, for dusting
Instructions
- 1. Preheat the oven to 325ยฐF (165ยฐC) and line the bottom of a springform pan with parchment paper.
- 2. Whisk egg yolks with yogurt, vanilla extract, lemon zest, and cornstarch until smooth.
- 3. In a separate bowl, beat egg whites until foamy, then gradually add sugar and beat until soft peaks form.
- 4. Gently fold the egg whites into the yogurt mixture in batches, keeping the batter airy.
- 5. Pour batter into the prepared pan and smooth the top.
- 6. Place the pan in a water bath and bake until the cake is set but still slightly jiggly in the center.
- 7. Turn off the oven and let the cake cool inside with the door cracked.
- 8. Remove from oven, cool completely, then refrigerate to fully set.
- 9. Dust with powdered sugar before serving.
Notes
- Do not overmix when folding to keep the cake light.
- Cooling slowly prevents cracking.
