A hearty and comforting winter minestrone soup packed with seasonal vegetables, beans, and pasta in a rich tomato broth perfect for cold-weather meals.

- 2 tbsp olive oil
- 1 small onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 1 zucchini, diced
- 1 cup green beans, chopped
- 1 can (14.5 oz) diced tomatoes
- 4 cups vegetable broth
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 cup chopped kale or spinach
- 1/2 cup small pasta (ditalini or elbow)
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- Grated Parmesan cheese for serving (optional)
Instructions
- 1. Heat olive oil in a large pot over medium heat.
- 2. Add onion, carrots, and celery and sautรฉ until softened.
- 3. Stir in garlic and cook until fragrant.
- 4. Add zucchini, green beans, diced tomatoes, vegetable broth, oregano, basil, salt, and pepper.
- 5. Bring soup to a boil, then reduce heat and simmer for 15 minutes.
- 6. Stir in beans and pasta.
- 7. Simmer for another 10โ12 minutes until pasta is tender.
- 8. Add kale or spinach and cook until wilted.
- 9. Taste and adjust seasoning.
- 10. Serve warm with Parmesan if desired.
Notes
- Add a Parmesan rind while simmering for extra depth of flavor.
- This soup stores well and tastes even better the next day.
