Description

This homemade version of the Jollibee ube pie brings that same deliciousness right into our kitchen, but with simple, wholesome ingredients I feel good about.


Ingredients

1 cup ube halaya
1/2 cup coconut milk
1/4 cup condensed milk
1 tablespoon cornstarch
1/4 teaspoon ube extract
1 package store-bought pie crusts
1 egg
1 tablespoon water
Vegetable oil


Instructions

  1. In a saucepan, combine ube halaya, coconut milk, condensed milk, and cornstarch. Cook over medium heat, stirring constantly, until the mixture thickens significantly. Stir in ube extract if using. Let cool completely
  2. Unroll your pie crusts. Cut them into rectangles, about 3×4 inches. Place a spoonful of cooled ube filling on one half of each rectangle
  3. Fold the other half of the crust over the filling, creating a pocket. Use a fork to crimp the edges securely, sealing in the ube pie Jollibee filling
  4. Whisk the egg and water together. Brush this egg wash over each assembled ube pie
  5. Heat about two inches of vegetable oil in a deep skillet to 350ยฐF (175ยฐC). Carefully place a few pies in the hot oil. Fry for 2-3 minutes per side, or until golden brown and crispy
  6. Remove the fried ube pie Jollibee treats with a slotted spoon and place them on a plate lined with paper towels to drain excess oil. Serve warm

Notes

Ensure your ube filling cools completely; this prevents a soggy crust.

Don’t overcrowd the pan when frying; fry in batches for even browning.

A consistent oil temperature is key for perfectly crispy shells. Use a thermometer!

For an extra golden finish, double-brush with egg wash.

Store leftover ube pies in an airtight container at room temperature for up to two days, or in the refrigerator for up to four days.
