1.5 lbs Boneless, skinless chicken breasts
2 tbsp Olive oil
8 oz Mushrooms (cremini or button), sliced
4 cloves Garlic, minced
1/2 cup Sun-dried tomatoes, packed in oil, chopped
1 cup Chicken broth
1/2 cup Heavy cream
1/4 cup Parmesan cheese, grated
4 cups Spinach, fresh (packed)
1 tsp Italian seasoning
To taste Salt and black pepper


Instructions

  1. Pat chicken breasts dry. Season both sides with salt, pepper, and Italian seasoning
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 5-7 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside
  3. Add sliced mushrooms to the same skillet. Sautรฉ for 5-7 minutes until softened and browned
  4. Stir in minced garlic and chopped sun-dried tomatoes. Cook for another minute until fragrant
  5. Pour in chicken broth, scraping up any browned bits from the bottom of the pan. Bring to a simmer
  6. Reduce heat to low. Stir in heavy cream and Parmesan cheese. Cook, stirring, until the sauce thickens slightly
  7. Add fresh spinach to the sauce. Cook until it wilts, about 1-2 minutes

Notes
