Description
This easy tortilla quiche uses a flour tortilla as the crust, making it a quick and delicious option for breakfast or brunch. Fill with your favorite veggies, cheese, and eggs!
Ingredients
1 large flour tortilla (burrito size)
4 large eggs
1/3 cup milk or cream
1/2 cup shredded cheddar cheese
1/4 cup chopped bell peppers
1/4 cup chopped spinach or kale
2 tablespoons chopped onion
Salt and pepper to taste
Optional: cooked bacon or sausage
Instructions
1. Preheat oven to 375°F (190°C).
2. Lightly grease a 9-inch pie dish or oven-safe skillet.
3. Press the tortilla into the dish, folding and overlapping edges as needed to fit.
4. In a mixing bowl, whisk together eggs, milk, salt, and pepper.
5. Add cheese, vegetables, and any optional meat. Stir to combine.
6. Pour the mixture into the tortilla-lined dish.
7. Bake for 25–30 minutes, or until the center is set and the top is lightly golden.
8. Let cool for 5 minutes before slicing and serving.
Notes
Great for using up leftover veggies and meats.
For a crispier crust, bake the tortilla alone for 5 minutes before adding filling.
Store leftovers in the fridge for up to 3 days and reheat gently.
