- 1 lb Italian sausage (mild or hot)
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 medium carrots, sliced
- 2 celery stalks, chopped
- 4 cups chicken broth
- 1 can (14.5 oz) crushed tomatoes
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp thyme
- Salt and pepper to taste
- 2 cups fresh spinach
- 1 package (9โ12 oz) cheese tortellini
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
Instructions
- 1. In a large pot or Dutch oven, brown the sausage over medium heat, breaking it into pieces.
- 2. Add onion, garlic, carrots, and celery. Sautรฉ for 5โ6 minutes until softened.
- 3. Pour in chicken broth and crushed tomatoes. Add basil, oregano, thyme, salt, and pepper.
- 4. Bring to a simmer, cover, and cook for 10 minutes to blend flavors.
- 5. Add tortellini and cook according to package instructions, usually 5โ7 minutes.
- 6. Stir in spinach and allow it to wilt.
- 7. Add heavy cream and Parmesan, stirring until warmed through but not boiling.
- 8. Taste and adjust seasoning before serving.
Notes
- For a lighter version, use half-and-half instead of heavy cream.
- Switch spinach for kale for a heartier, autumn feel.
- Leftovers may thickenโadd extra broth when reheating.
