Instructions

1. In a bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.

2. Lay out tortillas and spread about 1/4 of the filling in a log shape on the bottom third of each tortilla.

3. Fold in the sides and roll up tightly like a burrito. Secure with toothpicks if needed.

4. Heat 1โ€“2 inches of vegetable oil in a skillet or deep pan to 350ยฐF (175ยฐC).

5. Fry each cheesecake roll for 2โ€“3 minutes per side or until golden brown and crisp. Drain on paper towels.

6. In a shallow dish, mix granulated sugar and cinnamon. Roll each fried Xango in the mixture to coat.

7. Serve warm with optional toppings like whipped cream, sauces, or fresh fruit.

Notes

You can freeze assembled (unfried) Xangos for laterโ€”just fry from frozen, adding a minute or two to the cook time.
