These soft and chewy banana bread cookies taste like your favorite banana bread in cookie form perfectly sweet, warmly spiced, and ideal for using up ripe bananas.

- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 ripe banana, mashed
- 1 1/4 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup chopped walnuts or chocolate chips (optional)
Instructions
- 1. Preheat oven to 350ยฐF (175ยฐC). Line a baking sheet with parchment paper.
- 2. In a large bowl, cream butter, brown sugar, and granulated sugar until light and fluffy.
- 3. Add egg, vanilla, and mashed banana. Mix until well combined.
- 4. In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
- 5. Gradually add dry ingredients to wet mixture and stir until just combined.
- 6. Fold in walnuts or chocolate chips if using.
- 7. Scoop tablespoon-sized portions of dough onto prepared baking sheet, spacing 2 inches apart.
- 8. Bake for 10โ12 minutes, or until edges are set and centers are soft but cooked.
- 9. Cool on baking sheet for 5 minutes before transferring to a wire rack.
Notes
- For extra banana flavor, use two small ripe bananas.
- Store in an airtight container at room temperature for 3 days or refrigerate up to 5.
- Add a light glaze or sprinkle with cinnamon sugar for a fun twist.
