Tender, flaky, and subtly nutty einkorn biscuits made with rich cream for a wholesome and easy twist on a classic comfort bake.
Ingredients
2 cups einkorn flour
1 tablespoon baking powder
1/2 teaspoon fine sea salt
1 tablespoon sugar (optional)
1 cup heavy cream, plus more for brushing
1–2 tablespoons cold butter, for topping (optional)
Instructions
1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. In a large bowl, whisk together einkorn flour, baking powder, salt, and sugar if using.
3. Pour in the heavy cream and stir with a wooden spoon or fork until just combined and a shaggy dough forms.
4. Turn dough out onto a lightly floured surface and gently pat or roll it to about 3/4-inch thickness.
5. Use a biscuit cutter or glass to cut out rounds, gathering scraps and repeating as needed.
6. Place biscuits on the prepared baking sheet, close together for soft sides or spaced out for crispier edges.
7. Brush tops with a little extra cream.
8. Bake for 12–15 minutes, until lightly golden and puffed.
9. Optional: brush warm biscuits with melted butter before serving.
Notes
Einkorn flour is more delicate than modern wheat—avoid overmixing to maintain tenderness.
These biscuits pair beautifully with jam, honey, or savory spreads.
Store leftovers in an airtight container and reheat in a warm oven.
