Description

- 3 large eggs
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 cup vegetable oil
- 1 tsp vanilla extract
- 1 1/2 cups grated carrots
- 1 1/2 cups grated zucchini (squeezed dry)
- For the frosting:
- 8 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
Instructions
- 1. Preheat oven to 350ยฐF (175ยฐC) and grease a 9×13-inch baking pan.
- 2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and chopped nuts (if using).
- 3. In a large bowl, beat eggs, granulated sugar, and brown sugar until smooth. Add oil and vanilla extract, mixing until well combined.
- 4. Fold in grated carrots and zucchini.
- 5. Gradually add dry ingredients to wet, stirring just until combined.
- 6. Pour batter into prepared pan and spread evenly.
- 7. Bake for 35โ40 minutes, or until a toothpick inserted in the center comes out clean.
- 8. Cool cake completely before frosting.
- 9. To make the frosting: Beat cream cheese and butter until smooth. Add powdered sugar and vanilla, and beat until fluffy.
- 10. Spread frosting over cooled cake and refrigerate until set.
