Ingredients

2 tsp ground cinnamon

1/2 tsp ground nutmeg

1/2 cup chopped pecans or walnuts (optional)

3 large eggs

1 cup granulated sugar

1/2 cup brown sugar

1 cup vegetable oil

1 tsp vanilla extract

1 1/2 cups grated carrots

1 1/2 cups grated zucchini (squeezed dry)

For the frosting:

8 oz cream cheese, softened

1/4 cup unsalted butter, softened

2 cups powdered sugar

1 tsp vanilla extract


Instructions

1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.

2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and chopped nuts (if using).

3. In a large bowl, beat eggs, granulated sugar, and brown sugar until smooth. Add oil and vanilla extract, mixing until well combined.

4. Fold in grated carrots and zucchini.

5. Gradually add dry ingredients to wet, stirring just until combined.

6. Pour batter into prepared pan and spread evenly.

7. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.

8. Cool cake completely before frosting.

9. To make the frosting: Beat cream cheese and butter until smooth. Add powdered sugar and vanilla, and beat until fluffy.

10. Spread frosting over cooled cake and refrigerate until set.
