Description
SweetFire Chicken Breast is a sweet, tangy, and spicy stir-fry dish inspired by Panda Expressโfeaturing crispy chicken, pineapple, and bell peppers in a bold chili garlic sauce.
Ingredients
1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
1/2 cup cornstarch
1/4 cup flour
2 eggs, beaten
1/4 cup oil (for frying)
1 red bell pepper, chopped
1/2 red onion, chopped
1 cup pineapple chunks (fresh or canned, drained)
2 green onions, sliced (for garnish)
For the sauce:
1/3 cup sweet chili sauce
2 tbsp rice vinegar
1 tbsp soy sauce
1 tbsp ketchup
1 tsp garlic, minced
1/2 tsp crushed red pepper flakes (optional)
Instructions
1. In a shallow bowl, mix flour and cornstarch. Dip chicken pieces in egg, then dredge in the flour mixture.
2. Heat oil in a skillet over medium-high heat. Fry chicken in batches until golden and crispy. Drain on paper towels.
3. In a small bowl, whisk together sweet chili sauce, vinegar, soy sauce, ketchup, garlic, and red pepper flakes.
4. In a clean skillet or wok, sautรฉ bell pepper and red onion for 2โ3 minutes until just tender.
5. Add pineapple chunks and cooked chicken to the skillet.
6. Pour sauce over the mixture and toss to coat evenly.
7. Cook for another 2โ3 minutes until everything is hot and glazed.
8. Serve immediately over steamed rice and garnish with sliced green onions.
Notes
For extra crispiness, double fry the chicken.
Adjust spice level by increasing or reducing red pepper flakes.
Pairs well with jasmine rice, cauliflower rice, or noodles.
