Description
Tender, juicy chicken slow-cooked in a sweet and tangy Hawaiian-inspired sauce made with pineapple, soy sauce, and brown sugar—an easy and delicious crockpot dinner.
Ingredients
2 lbs boneless, skinless chicken thighs or breasts
1 can (20 oz) pineapple chunks in juice, undrained
1/2 cup soy sauce (gluten-free if needed)
1/2 cup brown sugar
1/4 cup ketchup
2 cloves garlic, minced
1 tsp grated fresh ginger or 1/2 tsp ground ginger
1 tbsp cornstarch + 2 tbsp water (optional, for thickening)
Sliced green onions and sesame seeds for garnish (optional)
Instructions
1. Place chicken in the bottom of the crockpot.
2. In a bowl, whisk together pineapple chunks with juice, soy sauce, brown sugar, ketchup, garlic, and ginger.
3. Pour the sauce mixture over the chicken.
4. Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until chicken is tender and fully cooked.
5. Optional: For a thicker sauce, remove chicken and stir a cornstarch slurry (cornstarch + water) into the sauce. Cook on HIGH for 10–15 minutes until thickened, then return chicken to crockpot.
6. Shred or leave chicken whole. Serve over rice and garnish with green onions and sesame seeds if desired.
Notes
Chicken thighs are more flavorful and tender, but breasts work just as well.
Add bell peppers or onions to the crockpot for extra veggies.
Leftovers make great sandwiches or rice bowls—store in the fridge up to 4 days or freeze for up to 2 months.
