Notes
Always use the ripest, most fragrant strawberries for the best flavor.
Taste the mixture before chilling and adjust sweetness; lemons vary in tartness.
Chill the concentrate thoroughly for maximum refreshment. Making it ahead allows flavors to meld.
For extra lemon flavor, zest one lemon into the warm simple syrup.
Store concentrate in an airtight container in the refrigerator for up to 3-4 days; stir well before serving.
Substitute strawberries with raspberries or blueberries, or use lime juice instead of lemon for a twist.
Reduce sugar or use honey/maple syrup for a less sweet drink. Add fresh mint or basil to the blender for an herbaceous note.
For a fizzy drink, top with sparkling water or club soda.
Frozen strawberries can be used; thaw and drain any excess liquid before blending.
For an adult version, add a shot of vodka or gin to a glass of the prepared drink.
