Description
A copycat recipe of Starbucks’ egg white bites—fluffy, protein-packed, and made with roasted red peppers, spinach, and Monterey Jack cheese. Perfect for a healthy, grab-and-go breakfast.
Ingredients
1 cup egg whites (about 6 large eggs or from a carton)
1/4 cup cottage cheese
1/4 cup shredded Monterey Jack cheese
1/4 cup chopped roasted red peppers (drained)
1/4 cup chopped fresh spinach
1/8 tsp salt
1/8 tsp black pepper
Nonstick cooking spray
Instructions
1. Preheat oven to 300°F (150°C). Lightly spray a silicone muffin pan or regular muffin tin with nonstick spray.
2. In a blender, combine egg whites, cottage cheese, salt, and pepper. Blend until smooth.
3. Stir in Monterey Jack cheese, red peppers, and spinach.
4. Pour mixture evenly into muffin cups, filling about 3/4 full.
5. Place muffin pan in a larger baking dish. Fill the outer dish with hot water to create a water bath.
6. Bake for 30–35 minutes or until set and slightly golden.
7. Remove from oven and let cool slightly before removing bites from the pan.
8. Serve warm or store in fridge for up to 4 days. Reheat in microwave for 30 seconds.
Notes
Use a silicone mold for easy release.
For extra creaminess, add a bit of cream cheese or Gruyère.
Customize with your favorite veggies or lean meats like turkey bacon.
