Description
A copycat recipe of Starbucks’ egg white bites fluffy, protein-packed, and made with roasted red peppers, spinach, and Monterey Jack cheese. Perfect for a healthy, grab-and-go breakfast.

- 1 cup egg whites (about 6 large eggs or from a carton)
- 1/4 cup cottage cheese
- 1/4 cup shredded Monterey Jack cheese
- 1/4 cup chopped roasted red peppers (drained)
- 1/4 cup chopped fresh spinach
- 1/8 tsp salt
- 1/8 tsp black pepper
- Nonstick cooking spray
Instructions
- 1. Preheat oven to 300°F (150°C). Lightly spray a silicone muffin pan or regular muffin tin with nonstick spray.
- 2. In a blender, combine egg whites, cottage cheese, salt, and pepper. Blend until smooth.
- 3. Stir in Monterey Jack cheese, red peppers, and spinach.
- 4. Pour mixture evenly into muffin cups, filling about 3/4 full.
- 5. Place muffin pan in a larger baking dish. Fill the outer dish with hot water to create a water bath.
- 6. Bake for 30–35 minutes or until set and slightly golden.
- 7. Remove from oven and let cool slightly before removing bites from the pan.
- 8. Serve warm or store in fridge for up to 4 days. Reheat in microwave for 30 seconds.
Notes
- Use a silicone mold for easy release.
- For extra creaminess, add a bit of cream cheese or Gruyère.
- Customize with your favorite veggies or lean meats like turkey bacon.
