Ingredients

  • 4 large flour tortillas
  • 6 large eggs
  • 1/4 cup milk
  • 1 tablespoon olive oil
  • 1 cup breakfast potatoes or diced hash browns
  • 1/2 cup cooked breakfast sausage or bacon, crumbled
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup shredded cheddar or pepper jack cheese
  • 1/4 cup salsa
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • Salt and black pepper, to taste
  • Optional toppings: avocado, sour cream, hot sauce

Instructions

  • 1. Heat olive oil in a skillet over medium heat.
  • 2. Add potatoes and cook until golden and tender, about 6 to 8 minutes.
  • 3. Stir in cooked sausage or bacon and black beans; warm through.
  • 4. In a bowl, whisk eggs with milk, cumin, chili powder, salt, and pepper.
  • 5. Push potato mixture to one side of the skillet and add eggs.
  • 6. Cook eggs gently, stirring, until just set.
  • 7. Warm tortillas in a dry skillet or microwave.
  • 8. Divide egg mixture among tortillas and top with cheese and salsa.
  • 9. Add optional toppings, roll into burritos, and serve warm.
