Ingredients

  • 1 1/2 cups whole wheat flour
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon brown sugar
  • 1 3/4 cups buttermilk
  • 2 tablespoons melted butter or olive oil
  • Optional: seeds or oats for topping

Instructions

  • 1. Preheat oven to 400ยฐF (205ยฐC) and line a baking sheet with parchment.
  • 2. In a large bowl, whisk whole wheat flour, all-purpose flour, oats, baking soda, salt, and brown sugar.
  • 3. Make a well in the center and pour in buttermilk and melted butter.
  • 4. Stir gently until a soft dough forms.
  • 5. Turn dough onto a floured surface and shape into a round loaf.
  • 6. Place loaf on prepared baking sheet and score a deep cross on top.
  • 7. Sprinkle with oats or seeds if desired.
  • 8. Bake for 35 to 40 minutes until golden and the loaf sounds hollow when tapped.
  • 9. Cool slightly before slicing and serving.

Notes

  • Do not overmix the dough to keep the bread tender.
  • If buttermilk is unavailable, use milk with 1 tablespoon lemon juice or vinegar.
  • Best enjoyed fresh but can be frozen for later use.
