- 1 1/2 cups whole wheat flour
- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 tablespoon brown sugar
- 1 3/4 cups buttermilk
- 2 tablespoons melted butter or olive oil
- Optional: seeds or oats for topping
Instructions
- 1. Preheat oven to 400ยฐF (205ยฐC) and line a baking sheet with parchment.
- 2. In a large bowl, whisk whole wheat flour, all-purpose flour, oats, baking soda, salt, and brown sugar.
- 3. Make a well in the center and pour in buttermilk and melted butter.
- 4. Stir gently until a soft dough forms.
- 5. Turn dough onto a floured surface and shape into a round loaf.
- 6. Place loaf on prepared baking sheet and score a deep cross on top.
- 7. Sprinkle with oats or seeds if desired.
- 8. Bake for 35 to 40 minutes until golden and the loaf sounds hollow when tapped.
- 9. Cool slightly before slicing and serving.
Notes
- Do not overmix the dough to keep the bread tender.
- If buttermilk is unavailable, use milk with 1 tablespoon lemon juice or vinegar.
- Best enjoyed fresh but can be frozen for later use.
