- 1 cup milk
- 8 ounces white fish (cod or haddock), cut into chunks
- 8 ounces shrimp, peeled and deveined
- 1 cup corn kernels (optional)
- Chopped fresh parsley, for garnish
Instructions
- 1. Melt butter in a large pot over medium heat.
- 2. Add onion and cook until softened, about 5 minutes.
- 3. Stir in garlic and cook for 30 seconds until fragrant.
- 4. Add potatoes, broth, thyme, salt, and pepper.
- 5. Bring to a boil, then reduce heat and simmer for 12 to 15 minutes until potatoes are tender.
- 6. Stir in cream and milk and return to a gentle simmer.
- 7. Add fish, shrimp, and corn if using.
- 8. Cook for 5 to 7 minutes until seafood is just cooked through.
- 9. Taste and adjust seasoning as needed.
- 10. Serve hot garnished with fresh parsley.
