Ingredients
1 pound salmon belly, skin-on
1 tablespoon soy sauce
1 tablespoon mirin or honey
1 teaspoon sesame oil
2 cloves garlic, minced
1/2 teaspoon grated fresh ginger
Salt and pepper to taste
Optional: sesame seeds and green onions for garnish
Instructions
1. In a small bowl, mix soy sauce, mirin or honey, sesame oil, garlic, and ginger.
2. Pat salmon belly dry and season lightly with salt and pepper.
3. Heat a skillet over medium-high heat and place salmon belly skin-side down. Sear for 3–4 minutes until skin is crispy.
4. Flip and cook for another 2–3 minutes until just cooked through.
5. Pour sauce into pan and let it bubble for 1 minute, coating the salmon belly.
6. Remove from heat and garnish with sesame seeds and chopped green onions if desired.
7. Serve with rice and sautéed greens or as part of a Japanese-inspired meal.
