Description

Traditional Scottish rumbledethumps made with creamy mashed potatoes, tender cabbage, sautรฉed onions, and topped with melted cheese for a comforting side dish.


Ingredients

  • 2 lb potatoes, peeled and cubed
  • 1/2 head green cabbage, finely sliced
  • 1 medium onion, thinly sliced
  • 4 tablespoons butter
  • 1/2 cup milk or cream
  • Salt to taste
  • Black pepper to taste
  • 1 cup grated cheddar cheese

Instructions

  • 1. Place the potatoes in a large pot of salted water and boil until tender, about 15โ€“20 minutes
  • 2. Meanwhile, cook the sliced cabbage in boiling water for 5 minutes, then drain well
  • 3. In a skillet, melt 2 tablespoons of butter and sautรฉ the onion until soft and lightly golden
  • 4. Drain the potatoes and mash with remaining butter and milk until smooth
  • 5. Stir the cooked cabbage and sautรฉed onions into the mashed potatoes
  • 6. Season with salt and black pepper to taste
  • 7. Transfer the mixture to a greased baking dish and spread evenly
  • 8. Sprinkle grated cheddar cheese over the top
  • 9. Bake at 375ยฐF (190ยฐC) for 20โ€“25 minutes until the cheese is melted and lightly golden
  • 10. Serve hot as a side dish or vegetarian main
