Description
Traditional Scottish rumbledethumps made with creamy mashed potatoes, tender cabbage, sautรฉed onions, and topped with melted cheese for a comforting side dish.
Ingredients

- 2 lb potatoes, peeled and cubed
- 1/2 head green cabbage, finely sliced
- 1 medium onion, thinly sliced
- 4 tablespoons butter
- 1/2 cup milk or cream
- Salt to taste
- Black pepper to taste
- 1 cup grated cheddar cheese
Instructions
- 1. Place the potatoes in a large pot of salted water and boil until tender, about 15โ20 minutes
- 2. Meanwhile, cook the sliced cabbage in boiling water for 5 minutes, then drain well
- 3. In a skillet, melt 2 tablespoons of butter and sautรฉ the onion until soft and lightly golden
- 4. Drain the potatoes and mash with remaining butter and milk until smooth
- 5. Stir the cooked cabbage and sautรฉed onions into the mashed potatoes
- 6. Season with salt and black pepper to taste
- 7. Transfer the mixture to a greased baking dish and spread evenly
- 8. Sprinkle grated cheddar cheese over the top
- 9. Bake at 375ยฐF (190ยฐC) for 20โ25 minutes until the cheese is melted and lightly golden
- 10. Serve hot as a side dish or vegetarian main
