- 1 pint vanilla or pistachio gelato, softened
- 1 pint strawberry or raspberry gelato, softened
- 1 1/2 cups crushed chocolate cookies or graham crackers
- 1/4 cup melted butter
- 1 cup whipped cream or whipped topping
- Chocolate shavings or fruit for garnish
- Optional: 2 tbsp chocolate or caramel sauce for drizzling
Instructions
- 1. Line an 8-inch springform pan with plastic wrap or parchment paper.
- 2. Mix crushed cookies with melted butter and press into the bottom of the pan to form a crust. Freeze for 15 minutes.
- 3. Spread the first layer of gelato (e.g., chocolate) evenly over the crust. Freeze for 20–30 minutes until firm.
- 4. Repeat with the second and third gelato flavors, freezing each layer before adding the next.
- 5. Once final layer is firm, top with whipped cream and garnish with chocolate shavings, fruit, or a drizzle of sauce.
- 6. Freeze the entire cake for at least 4 hours, or overnight for best texture.
- 7. Let sit at room temperature for 5–10 minutes before slicing and serving.
