Ingredients
For the crumpets:
1 cup warm milk (about 110ยฐF)
1 cup warm water (about 110ยฐF)
2 tsp active dry yeast
1 tsp sugar
2 cups all-purpose flour
1/2 tsp salt
1/2 tsp baking soda
Butter or oil for greasing rings and skillet
For serving:
Crรจme fraรฎche or sour cream
Caviar (such as salmon roe or sturgeon)
Chopped fresh chives or dill (optional)
Instructions
1. In a bowl, combine warm milk, warm water, sugar, and yeast. Let sit for 5โ10 minutes until foamy.
2. Add flour and salt to the yeast mixture and stir until smooth. Cover and let rise for 1 hour.
3. Stir in baking soda. Let batter rest for 10 minutes.
4. Heat a greased nonstick skillet over medium-low heat. Grease crumpet rings and place them in the skillet.
5. Spoon batter into rings to about 3/4 full. Cook for 5โ7 minutes until bubbles form and the tops begin to set.
6. Remove rings and flip crumpets. Cook for 1โ2 more minutes until golden on both sides.
7. Repeat with remaining batter.
8. Cool slightly and top each crumpet with a dollop of crรจme fraรฎche and a small spoonful of caviar.
9. Garnish with herbs if desired and serve immediately.
Notes
Use store-bought crumpets for a quicker version.
