- 2 tsp active dry yeast
- 1 tsp sugar
- 2 cups all-purpose flour

- Butter or oil for greasing rings and skillet

Instructions
- 1. In a bowl, combine warm milk, warm water, sugar, and yeast. Let sit for 5โ10 minutes until foamy.
- 2. Add flour and salt to the yeast mixture and stir until smooth. Cover and let rise for 1 hour.
- 3. Stir in baking soda. Let batter rest for 10 minutes.
- 4. Heat a greased nonstick skillet over medium-low heat. Grease crumpet rings and place them in the skillet.
- 5. Spoon batter into rings to about 3/4 full. Cook for 5โ7 minutes until bubbles form and the tops begin to set.
- 6. Remove rings and flip crumpets. Cook for 1โ2 more minutes until golden on both sides.
- 7. Repeat with remaining batter.
- 8. Cool slightly and top each crumpet with a dollop of crรจme fraรฎche and a small spoonful of caviar.
- 9. Garnish with herbs if desired and serve immediately.
