  • For the crumble:
  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 cup cold butter, cubed

Instructions

  • 1. Preheat oven to 325ยฐF (163ยฐC). Line a 9-inch springform pan with parchment and grease the sides.
  • 2. Mix crust ingredients and press into the bottom of the pan. Bake for 10 minutes, then set aside.
  • 3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream.
  • 4. Pour cheesecake batter over the crust and smooth the top.
  • 5. In a saucepan, cook peaches, brown sugar, cinnamon, nutmeg, cornstarch, and lemon juice over medium heat until thickened (5โ€“7 minutes). Let cool slightly.
  • 6. Spoon peach mixture over the cheesecake layer.
  • 7. In a small bowl, mix flour, brown sugar, cinnamon, and cubed butter until crumbly. Sprinkle over peaches.
  • 8. Bake for 55โ€“65 minutes or until the center is set with a slight jiggle.
  • 9. Turn off oven, crack the door, and let cheesecake cool inside for 1 hour.
  • 10. Chill in the refrigerator for at least 4 hours or overnight before serving.
