- 1 1/2 cups graham cracker crumbs

- 3 (8 oz) packages cream cheese, softened

- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- For the peach cobbler topping:
- 2 cups sliced fresh or canned peaches (drained if canned)
- 1/4 cup brown sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- For the crumble:
- 1/2 cup all-purpose flour
- 1/4 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/4 cup cold butter, cubed
Instructions
- 1. Preheat oven to 325ยฐF (163ยฐC). Line a 9-inch springform pan with parchment and grease the sides.
- 2. Mix crust ingredients and press into the bottom of the pan. Bake for 10 minutes, then set aside.
- 3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream.
- 4. Pour cheesecake batter over the crust and smooth the top.
- 5. In a saucepan, cook peaches, brown sugar, cinnamon, nutmeg, cornstarch, and lemon juice over medium heat until thickened (5โ7 minutes). Let cool slightly.
- 6. Spoon peach mixture over the cheesecake layer.
- 7. In a small bowl, mix flour, brown sugar, cinnamon, and cubed butter until crumbly. Sprinkle over peaches.
- 8. Bake for 55โ65 minutes or until the center is set with a slight jiggle.
- 9. Turn off oven, crack the door, and let cheesecake cool inside for 1 hour.
- 10. Chill in the refrigerator for at least 4 hours or overnight before serving.
