Ingredients
2 medium russet potatoes, peeled and shredded
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp garlic powder
1/4 cup grated Parmesan cheese
2 tbsp finely chopped green onions (optional)
2 tbsp olive oil or butter for frying
Optional: fresh parsley or extra Parmesan for garnish
Instructions
1. Place shredded potatoes in a clean towel and squeeze out as much moisture as possible.
2. Transfer to a bowl and mix in salt, pepper, garlic powder, Parmesan cheese, and green onions if using.
3. Heat olive oil or butter in a large skillet over medium-high heat.
4. Add potato mixture in a single layer, pressing down gently. Cook 4–5 minutes per side or until golden brown and crisp.
5. Flip carefully and cook the other side until equally crisp and cooked through.
6. Transfer to a paper towel-lined plate. Sprinkle with extra Parmesan or herbs if desired.
7. Serve hot as a breakfast side or base for eggs.

Add a pinch of crushed red pepper flakes for a spicy kick.
