Instructions
- 1. Place shredded potatoes in a clean towel and squeeze out as much moisture as possible.
- 2. Transfer to a bowl and mix in salt, pepper, garlic powder, Parmesan cheese, and green onions if using.
- 3. Heat olive oil or butter in a large skillet over medium-high heat.
- 4. Add potato mixture in a single layer, pressing down gently. Cook 4โ5 minutes per side or until golden brown and crisp.
- 5. Flip carefully and cook the other side until equally crisp and cooked through.
- 6. Transfer to a paper towel-lined plate. Sprinkle with extra Parmesan or herbs if desired.
- 7. Serve hot as a breakfast side or base for eggs.
