Ingredients

  • 1 tbsp olive oil
  • 1 lb ground beef or Italian sausage
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes (optional)
  • 2 tbsp tomato paste
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken or beef broth
  • 8 oz lasagna noodles, broken into pieces
  • 1/2 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil or parsley, for garnish
  • Salt and black pepper, to taste

Instructions

  • 1. Heat olive oil in a large pot over medium heat. Add ground beef and onion, cooking until meat is browned and onion is soft. Drain excess fat if needed.
  • 2. Stir in garlic, oregano, basil, red pepper flakes, and tomato paste. Cook for 1โ€“2 minutes until fragrant.
  • 3. Add crushed tomatoes and broth. Bring to a boil.
  • 4. Stir in broken lasagna noodles. Reduce heat and simmer 15โ€“20 minutes, stirring occasionally, until noodles are tender.
  • 5. Season with salt and pepper to taste.
  • 6. Ladle soup into bowls and top with a spoonful of ricotta, a sprinkle of mozzarella and Parmesan, and fresh basil or parsley.

Notes

  • You can substitute ground turkey or chicken for a lighter version.
  • For extra creaminess, stir ricotta directly into the soup instead of dolloping on top.
