Description
A cozy and hearty One-Pot Lasagna Soup with ground beef, pasta, tomatoes, and Italian herbs โ all the flavor of lasagna in a comforting bowl.

- 1 tbsp olive oil
- 1 lb ground beef or Italian sausage
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp red pepper flakes (optional)
- 2 tbsp tomato paste
- 1 can (28 oz) crushed tomatoes
- 4 cups chicken or beef broth
- 8 oz lasagna noodles, broken into pieces
- 1/2 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Fresh basil or parsley, for garnish
- Salt and black pepper, to taste
Instructions
- 1. Heat olive oil in a large pot over medium heat. Add ground beef and onion, cooking until meat is browned and onion is soft. Drain excess fat if needed.
- 2. Stir in garlic, oregano, basil, red pepper flakes, and tomato paste. Cook for 1โ2 minutes until fragrant.
- 3. Add crushed tomatoes and broth. Bring to a boil.
- 4. Stir in broken lasagna noodles. Reduce heat and simmer 15โ20 minutes, stirring occasionally, until noodles are tender.
- 5. Season with salt and pepper to taste.
- 6. Ladle soup into bowls and top with a spoonful of ricotta, a sprinkle of mozzarella and Parmesan, and fresh basil or parsley.
Notes
- You can substitute ground turkey or chicken for a lighter version.
- For extra creaminess, stir ricotta directly into the soup instead of dolloping on top.
- This soup reheats well, but the noodles may absorb broth โ add extra broth when serving leftovers.
