- 1 lb Italian sausage (mild or spicy), casings removed
- 1 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 3 cups chicken broth
- 1 cup heavy cream
- 12 oz pasta (penne or rigatoni)
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- Salt and black pepper to taste
- 1 cup freshly grated Parmesan cheese
- 1 cup baby spinach (optional)
- Fresh parsley for garnish
Instructions
- 1. Heat olive oil in a large deep skillet or pot over medium heat.
- 2. Add sausage and cook until browned, breaking it up as it cooks.
- 3. Add onion and sautรฉ until softened, then stir in garlic until fragrant.
- 4. Pour in chicken broth and heavy cream, then add pasta, Italian seasoning, paprika, salt, and pepper.
- 5. Bring to a gentle boil, then reduce heat and simmer uncovered, stirring occasionally, until pasta is tender and sauce thickens.
- 6. Stir in Parmesan cheese until melted and creamy.
- 7. Fold in spinach if using and cook until wilted.
- 8. Garnish with fresh parsley and serve hot.
Notes
- Use short pasta shapes for best one-pot results.
- For a lighter version, substitute half-and-half for heavy cream.
